There is a new fad in cooking and it is found in sheet pan meals. If you are looking for a fast and easy way to feed your family, look no further. Sheet pan meals are the way to get food on the table quickly, with as little cleanup as possible. The following four meals are fun and effective sheet pan meals for the busy mom.
Garlic and herb salmon with sea salt and pepper zucchini and jasmine rice
Having a rice maker helps the jasmine rice to cook within about 20 minutes at the most. I start the rice and then turn to prepping the rest of the meal.
ingredients
- 4 to 6 slices of boneless, skinless salmon
- 2 large zucchini
- your favorite salmon herbs
- sea salt
- pepper
- Jasmine Rice (2 cups)
- Clove of garlic
- Olive Oil
directions
- Heat oven to 375 degrees
- Roll the salmon in a little olive oil
- Rub the herbs into the salmon and top with grated garlic
- Place the salmon onto the sheet pan
- Clean and cut the zucchini into slices
- Brush the zucchini with olive oil and top with sea salt and pepper
- Cook all for about 15 minutes then turn everything over.
- Cook for another 20 minutes.
- Plate and enjoy.
